eats and treats

some of my favorite recipes.  go on, give them a try....you'll like 'em!

apps and sides
7up biscuits
edamame fried rice
skinny baked mozzarella sticks
vegan stuffed mushrooms
mac and cheese soup
baked zucchini sticks

desserts and breakfasts
petite chocolate chip banana bread loaves - i made these as muffins and they were bangin!
greek yogurt pancakes

main courses
asian turkey meatballs
sweet and fiery pork tenderloin - i couldn't find the sweet red chili sauce and i refused to spend $4 on a huge bottle of sriracha sauce that i would hardly use.  so instead, i used garlic chili sauce and some chipotle puree that i already had on hand.  this was phenomenal, and matt and i both think the sauce would make for a fantastic wing sauce.
broiled tilapia with thai coconut curry sauce - this sauce was so good, i wanted to lick the plate
ultimate beef stroganoff
slow cooker pulled pork
quick skillet steak with onions and mushrooms - use the leftovers to make faux-philly-cheesesteaks!
pork chops with dijon herb sauce
garlic balsamic crusted pork tenderloin
pasta with italian chicken sausage, escarole, and beans
chicken and broccoli noodle casserole
shepard's pie, lightened up - so.good.
crock pot kalua pork - the most amazing pork. ever. seriously.
crock pot bolognese sauce
chicken and white bean enchiladas with creamy salsa verde - make this.  now.
lighter chicken saltimbocca
baby pasta shells with asparagus and marinara
redstone grill chili - best.chili.ever.
white chicken and asparagus lasagna
hearty chicken stew with butternut squash and quinoa
crock pot french dip
homemade calzone
penne with roasted asparagus and balsamic butter
mediterranean chicken and orzo bake - i don't own a dutch oven, so i just made this in our oven-safe calphalon skillet.  it still turned out incredible.
slow cooker sweet and tangy short ribs - omg.  this was fall-off-the-bone, melt-in-your-mouth tender.  and the sauce was bangin.
low-fat baked ziti with spinach - most of my ziti attempts come out dry.  this was not at all dry, and even heating up leftovers the next day was good!
chicken tikka masala - matt makes this for us when we're craving indian.  it's delicious!
chicken puttanesca - this is seriously my favorite meal.
